Pineapple Green Chile Quesadillas
Pineapple Green Chile Quesadillas
2 flour tortillas
cooking oil spray
1/3 cup (or more) of monterrey jack cheese shredded
2 tbsp. pineapple tidbits well-drained, chopped
1 tbsp. canned green chiles diced
1 tbsp. fresh cilantro chopped
Spray one side of two tortillas. Place one tortilla on an oiled
skillet. Place cheese, pineapple, green chiles and cilantro on
tortilla. Place another tortilla on this. Press down on tortilla
to flatten. Turn when tortilla is lightly browned on other side.
Remove from pan when cheese begins to melt. Cool before eating.
Cut quesadillas into triangles and serve with ranch dressing.
Can also be made in a quesadillas maker. Serves 1-2.
