Water Chestnut and Bacon Bundles
1-8 oz. can water chestnuts sliced
1/4 cup brown sugar
1/8 cup soy sauce
1 small ancho chile dried (re-hydrate chili in hot water, puree
in blender)
bacon slices (cut in half)
Marinate water chestnuts in sauce consisting of the brown sugar,
soy sauce and ancho chile for a few hours in refrigerator. Take
a bacon slice and wrap around 2-3 water chestnuts and secure
with a toothpick. Broil, at first under low heat, then under
high heat until bacon is cooked.
