Fried Rice
4 tbsp. oil
1/4 cup sliced onions
1/4 cup thinly sliced celery
1 cup diced cooked ham
1/4 cup diced green pepper
4 cups cold boiled rice
1 tbsp. soy sauce
2 eggs lightly beaten
In a heavy frying pan heat oil, add green onions, celery, ham and
green pepper. Stir well, saute for one minute. Add rice, stirring
it very quickly so it will not stick to the pan. Add the soy sauce
and mix well. Then add eggs. Mix well, saute until eggs are set.
Serve immediately on preheated serving dish. Pour over additional
soy sauce. Kids love this and you can use any kind of meat.
