Crispy Browned Hash
1 cup beef chopped
1 cup cooked potatoes chopped
1 onion chopped
1 tbsp. parsley minced
1-2 tbsp. shortening or oil
1/2 cup milk
dash salt
dash black pepper
Combine all ingredients except shortening and milk. Heat shortening
in heavy skillet over medium heat. When shortening is very hot,
spread hash evenly in skillet. Brown hash quickly 10-15 minutes. Add
milk and mix. Cover and cook slowly about 10 minutes or until crisp.
Serves 2-3.
