Apple Pie Muffins

Apple Pie Muffins

3 tbsp. butter
2/3 cup brown sugar lightly packed
1 jumbo (or 2 small eggs) egg beaten
1 cup milk 
1 cup unbleached flour 
1/2 cup whole wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
dash nutmeg
1 apple finely chopped
cane sugar (optional)
Cream butter and sugar in a bowl. Add egg and milk 
alternatively with sifted dry ingredients. Mix apples 
with a little flour. Add to muffin mixture. Do not 
overmix dough. Fill a greased muffin pan with mixture. 
Sprinkle muffins with sugar. Bake in 400 degree oven 
for 15-20 minutes. Makes 12 muffins. Add 1 tbsp. 
unbleached flour for high altitude.
