Quick Corn Bread
1 cup biscuit mix
1 cup yellow corn meal
3 tsp. baking powder
2 eggs (3 for high altitude)
1 cup milk
1/3 cup honey
4 tbsp. butter or margarine melted and cooled
In a large bowl stir together dry ingredients. In a small bowl, beat
egg lightly, stir in milk, honey and butter. Pour egg mixture into
dry ingredients and mix just until moistened. Pour batter into a well
greased 8 inch square or round baking pan. Bake in a 400 degree oven
for 25 to 30 minutes or until a toothpick inserted in center comes
out clean. Cut into squares on wedges and serve warm.
