Whole Wheat Muffins
1 cup milk or 1/2 cup evaporated milk and 1/2 water
1 egg yolk
1 egg white (beat until frothy)
1 1/2 cups unbleached flour
1/2 cup whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
1/3 cup brown sugar lightly packed
1 tbsp. butter
Combine milk and egg yolk in a measuring cup. Sift dry ingredients
in a another bowl. Stir in, with a fork, brown sugar. Do the same
for the butter. Add milk and egg mixture. Add egg white. Do not
overmix dough. Bake at 400 degree oven in a greased muffin pan for
15-20 minutes. Makes 12 muffins.
