Forest Pancakes
6 eggs
1/4 tsp. salt
1/2 cup sugar
1 cup flour
1 tbsp. butter (melted)
1/2 tsp. baking soda
1 cup milk
1 tsp. vanilla
Beat eggs until light, add sugar, milk, salt, flour, baking powder,
butter and vanilla. Beat thoroughly, batter should be very thin. Using
about 1/4-1/3 cup batter for each pancake, pour into lightly greased
skillet, tilting skillet to make plate sized paper thin pancakes. Turn
pancakes when edges brown. Spread with butter and sugar or jam.
Makes 20 pancakes.
