JEPK's Coffee Cake
1 cup vegetable shortening
1 1/2 cups sugar
4 eggs
3 1/2 cups flour
1 tbsp. baking powder
1/2 tsp. salt
1-15 oz. can evaporated milk
Topping
1/2 cup sugar
1/4 cup pecans finely chopped
1 tbsp. cocoa
1 tbsp. cinnamon
In a bowl, cream shortening and sugar with an electric mixer at
high speed. Add one egg at a time and mix. Sift flour, baking
powder and salt together. At low speed, add flour ingredients
alternating with the evaporated milk. Pour mixture into greased
10 inch bundt pan. Combine topping ingredients. Mix into batter
for a marbled effect. Bake at 350 degrees for 1 hour. Cool in
pan for 10 minutes. Then turn out on a plate and sprinkle with
powdered sugar.
