JEPK's Mandarin Orange Cake

JEPK's Mandarin Orange Cake

1 cup flour (do not sift before measuring)
1 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1-11 oz. can mandarin oranges
1 egg
1 tsp. vanilla
Sift dry ingredients in a bowl. Add mandarin oranges, eggs and vanilla. 
Stir and blend well- helps oranges to break. Pour into a greased 8 by 
8 inch pan. Bake at 350 degrees for 30 minutes. Drizzle icing over cake.

Icing

3 tbsp. mandarin orange juice 3 tbsp. margarine 3/4 cup brown sugar Mix ingredients in a saucepan. Bring to a low boil- do not over boil because the mixture will become too sugary. Drizzle over cake soon after removing from oven. Let cool then serve with whipping cream.
