Magic Fruit Cake

Magic Fruit Cake
From the 1960s

2 1/2 cups flour sifted
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
2 eggs slightly beaten
1 can sweetened condensed milk
2 2/3 cups (28 oz. jar) prepared mincemeat
2 cups mixed candied fruit
1/2 cup dried cranberries
1 cup walnuts coarsley chopped
Butter a 9 inch tube or spring form pan. Line with wax paper and 
butter again. Sift together flour, baking soda and spices. Set 
aside in a large size bowl. In another bowl, combine eggs, 
sweetened condensed milk, mincemeat, fruit and nuts and mix well. 
Fold in sifted dry ingredients. Turn into prepared pan. Bake slowly 
in 300 degree oven for 2 hours or until center springs back when 
lightly touched with finger and surface is golden brown. Cool in 
pan for 5 minutes. Turn out of pan and remove paper. Cool and 
decorate with glazed cherries and walnut halves.
