Carrot Casserole
6 cups carrots circles (10-12 carrots)
1 1/2 cups bread crumbs
1/2 tsp. salt
dash black pepper
2-3 tbsp. onion minced
5 tbsp. butter, margarine or oil
2/3 cup cheddar cheese grated
water
Cook carrots in water (1 inch) and drain when cooking is
completed. Mash carrots. Pour carrot mixture in casserole dish.
Saute onions, crumbs, salt and pepper in butter. Add to carrot
mixture. Top with cheese. Bake in 350 oven for 10 minutes to
melt cheese.
