Casserole Egg Foo Young

Casserole Egg Foo Young
From the 1960s

8 eggs beaten
1 1/2 cups celery thinly sliced
1-16 oz. can bean sprouts drained
1/2 cup non-fat dry milk powder
2 tbsp. onion chopped
1 tbsp. parsley chopped
1/2 tsp. salt
1/8 tsp.pepper
mushroom sauce
Stir together all ingredients except mushroom sauce. Pour into 
greased 12 by 8 by 2 inch baking pan. Bake in oven at 350 degrees 
for 35 minutes or until knife inserted in center comes out clean. 
Cut in squares and serve with mushroom sauce. Serves 6.

Mushroom Sauce
1-4 oz. can mushrooms sliced drained
2 tbsp. green onions sliced
3 tbsp. margarine
2 tbsp. flour
1 1/2 cups chicken broth
1 tbsp. soy sauce
Saute mushrooms and onions in margarine until onion is tender. 
Blend in flour until smooth, then gradually stir in broth and 
soy sauce. Cook and stir until thickened and smooth.
