Rice and Beans Casserole
2-15 oz. cans chili beans
1-8 oz. can tomato sauce
1 small can chili salsa
1/2 cup hot taco relish (pico de gallo)
1 onion chopped
2 stalks celery, chopped
2 cups cooked rice
butter or margarine
Put chili beans in pan with their liquid, cook this for a couple of
hours. Add tomato sauce, chili salsa and taco relish. Fry onion and
celery in a bit of butter or margarine until tender. Add this to the
beans when they are done cooking. Then add rice and heat it up until
it is hot. Put all of it in a casserole and top with chunks of cheese.
Bake at 375 degrees until a lot of liquid has been absorbed and it is
brown on top.
