Caterer's Favorite Gravy
3-3 1/2 cups giblet broth
1/4 cup flour
dash salt
dash black pepper
Pour drippings in bowl. Leave most brown particles. Let fat rise,
skim off 1/4 cup fat. Pour 3 cups broth with drippings in pan and
heat and stir. Heat turkey fat in another pan, stir in 1/4 cup
flour. Cook 1-2 minutes until it is light brown. Gradually stir in
broth into fat and flour mixture. Stir over moderate heat until
thick and smooth. Add salt and pepper. Simmer until thick. Add
diced giblets and simmer 5 minutes if wanted.
